The Pinot Grigio variety originates from Italy. It is a short-cycle variety and is among the first to be harvested. The grape skins contain pink pigments, allowing for a cold pre-fermentation maceration of approximately 6 hours. This extracts the pigments, resulting in a pink color with orange hues. Fermentation takes place in stainless steel tanks at temperatures ranging from 14 to 18°C. Once fermentation is complete, the wine remains in the tank, undergoing lees stirring to enhance its depth of flavor. Clarification, filtration, and bottling follow. This is a wine meant to be enjoyed young, pairing well with light dishes and ideal for early spring.
