It's the winery's iconic wine. The winery's production began in 2011, and its goal is to showcase our defining characteristics, such as soil expression, vineyard management, and vine behavior. For 15 years, we've been working toward balance, and each year we delve deeper into the information that vineyard behavior provides us with in the outcome of each harvest. Over the years, we've managed to empirically separate and characterize the profiles that Tannat provides in each area, separating aromatic and gustatory profiles, and thus building hypotheses about our soils, maritime influence, and other aspects. The journey is endless, but each step helps our Tannat grow.


Aging: Clarification and racking are carried out, returning to its original cask and keeping it there until bottling on 9/09/2023. The cask is from 2013 and the last polishing was in 2019. It has always had wine.


Vinification: A 12-hour pre-fermentation maceration takes place at a temperature of 16 to 18°C, followed by fermentation at temperatures of 26 to 28°C, with occasional peaks of 30°C. Daily pumping over and a delestage prior to the end of fermentation. The wine is then transferred to a foudre, with lees removed during malolactic fermentation.


It has a purple color and an intense aroma on the nose dominated by ripe red fruit. On the palate, it has a sweet, slow entry, supported by gentle tannins. Fresh notes of eucalyptus emerge in the aftertaste. It has a very delicate finish.


This medium-to-high intensity wine pairs well with dishes with creamy to fatty content, mature cheeses, and red meats.
